variations: Instead of cooking the meatballs on top of the stove, you can bake them in a cast-iron skillet in the oven as follows: Heat half of the olive oil in a large cast-iron skillet in a preheated 400-degree oven for 5 minutes. Add the meatballs in 1 layer, then cook, uncovered, 15 to 18 minutes, turning once, until golden brown on all sides and cooked through. Repeat with the remaining olive oil and meatballs. Ground turkey can be substituted for the chicken if you prefer; spinach can be used instead of arugula for a slightly milder flavor.
